Anyone that knows me well can tell you that I am a HUGE fan of anything with green tea (matcha powder in particular) and pumpkin-- if there's matcha in it, I'll most likely eat it: green tea latte, green tea cake, green tea cookies, green tea roll, green tea chocolate, etc... I could probably drink green tea lattes several times a day...
One of my all-time favorite combos is green tea and white chocolate. Of course, green tea also pairs well with dark and milk chocolate, but the white chocolate combo has to be my personal favorite.
This cookie may seem very Asian, and the color may a bit unexpected, but it is a true delight with a soft and chewy center, resembling the texture of a classic American chocolate chip cookie; the slightly bitter hint of matcha that permeates throughout is perfectly balanced by the sweet, buttery white chocolate. It was a huge hit among my co-workers!

ingredients:
unsalted butter (7 Tablespoons)
granulated white sugar (1/4 cup)
brown sugar (1/2 cup)
a pinch of salt (1/4 teaspoon)
1 egg
cake flour (1 and 1/5 cup)
matcha powder (1 Tablespoon)
baking soda (1/4 teaspoon)
1/2 cup white chocolate chunks or coarsely chopped white chocolate
makes 18-24 cookies
prep time: 15 minutes
baking time: 6-8 minutes per sheet

Note: You do not need a super fancy matcha powder to make this. I usually use matcha powder from the brand Maeda-en. Good quality, not too expensive, and qualifies for Amazon Prime 2-day shipping!
1. Preheat oven to 330 F.
2. Sift the flour, matcha, and baking soda together. Mix well.

3. Microwave the butter until just melted.
4. Using a stand or hand mixer, mix the sugar and butter together on medium speed until well combined.
5. Add the egg and salt and mix until just combined.
6. Add the dry ingredients (flour, matcha, baking soda) and gently stir with a spatula. Be careful not to over-mix. Add the white chocolate.
7. Drop rounded tablespoonfuls of dough onto the baking sheet lined with parchment paper. Leave a 1.5-2 inch space between the cookies.
8. Bake for 7-9 minutes. Be careful not to overbake!
9. Let cool for 5 minutes, then transfer to a cooling rack.
