A simple way to spice up your good old omelet! Your morning breath may be exacerbated by the kimchi, but it will be totally worth it! The slight sweetness imparted by the mirin is a perfect balance to the pickle-y, spicy kimchi; I used green onions to add a bit of freshness, but feel free to add mushrooms, zucchini, or other greens of your choice that you think would go well! Feel free to include or omit the cheese, but mozzarella or cheddar would go well here. Add some green onions on top before serving and/or a healthy pile of fresh kimchi!

3 large eggs
salt and freshly ground black pepper
1 teaspoon olive oil
2 Tablespoons chopped kimchi
2 Tablespoons chopped green onions
1 teaspoon mirin
a handful of mozzarella cheese (depending on your preference)
Note: It's important that you don't overload the omelet with the fillings (i.e kimchi, green onions, cheese), or the omelet will not fold well!
1. Chop the green onions and the kimchi.
2. In a small bowl, whisk together the eggs, mirin, salt, and black pepper.
3. in a skillet, heat the olive oil for a few minutes on medium-high heat. Saute the green onions and kimchi for about 2 minutes, stirring occasionally.
4. Turn down the heat to medium, add the eggs and cover the skillet for 1 minute. Add the cheese, and cover for 1 more minute. Remove the lid, fold the omelet in half (using a spatula). Cook for a few more minutes if desired.

Serve with green onions scattered on top and with fresh kimchi on the side!
