This is not so much a recipe as it is a suggested cooking method.
Sweet potatoes are a beloved vegetable that are versatile and used in many recipes. However, one delicious way to enjoy them is to just bake them in the oven!
This method of cooking results in a creamy, moist flesh that resemble the texture of mashed sweet potatoes/ sweet potato casserole.

sweet potato- high in fiber (7g/ serving); large amount of vitamin B6 (reduces homocysteine levels- which contributes to hardening of arteries and blood vessels); rich in beta-carotene/ vitamin A (antioxidant; protects skin from sun damage; essential for healthy eyes); good source of manganese (essential component in metabolism of carbohydrates); rich in vitamins C and E (antioxidants; promotes healthy skin and hair)
canola oil/ vegetable oil
seasoning of your choice
cook time: 45 min- 1 hour

1. Preheat oven to 400F.
2. Using your hands or a pastry brush, lightly coat the sweet potatoes with canola oil or vegetable oil.
3. Pierce the sweet potatoes multiple times using a knife. (See picture)
4. Place on a baking sheet lined with aluminum foil (for easier clean-up), and bake for 45minutes to 1 hour, depending on the size of your s.potatoes and your preference for texture.
5. Make a lengthwise incision and enjoy! Sweet potatoes are quite versatile, so feel free to enjoy them as is, or add other seasonings! Sea salt and freshly ground black pepper, or brown sugar and cinnamon- absolutely delicious!
